Not sure if this is a bug/glitch, or designed this way... but frankly speaking I can't find any internal/external/lore/historical reason to believe the "noble mount" horse-tier, is something that's separate from war mount, and therefore, cannot be used for cavalry upgrades.
For example, the "Destrier" is a type of horse that is practically SYNONYMOUS to "war horse" in actual Medieval times. Literally, the first paragraph of Wikipedia article on "Destrier" states:
"The destrier is the best-known war horse of the Middle Ages. It carried knights in battles, tournaments, and jousts. It was described by contemporary sources as the Great Horse, due to its significance."
And yet, classified as a "noble mount", it cannot be used for upgrading cavalry, at all.
This, kinda makes the "noble mount" pointless within the game as once you've acquired a sufficient "noble mount" of your choice, it sees no practical use other than as just an expensive commodity to sell. Yes, it's a good item to earn money quickly since THESE HORSES PILE UP in your inventory, but at the phases in the game where these horses begin to pile up (=continuous large battles), money becomes literally the least of your worries (=already established noble or king with stable income).
Rather, a stable source of war mounts to use for cavalry upgrades is more needed for most players.
It's very difficult to see that this was a design choice, and I have to wonder if this isn't a bug, where the devs put a higher-tier of horses, and yet simply forgot to adjust the relevant settings for which horses can be used for cavalry upgrades.
(ps) When the HECK are the Vlandian knights going to get their horses back from Imperial cataphracts? This also seems to be a bug/glitch/mistake from the devs resulting from re-designating horse types used for units due to new horse-tier/types being added in game.
