What is fast mode?

How does dying in battle work? Can you always just run away after you die in battle?

I don't have much experience with this game. I'm a bit confused because I thought if you died in battle, you have no choice but to surrender or send your troops without you. However I've been watching a streamer play, and he died in battle and just had the option of "Leave" and just walked away. I've seen both situations happen.

Does it depend on anything?
