i can't sue for peace while actively dying

im in 2 front war, all my vassals are captured, i have one castle left after vlandia cane with the 2000 men army and took my city , and i cant make peace even i i want to pay tribute. A question on sieges

Has anyone ever taken a castle or town by waiting for the food to run out? I have 1000+ hours in the game and I have never even thought about waiting 30 days to do it, can anyone give any insight to when it is useful?
