Controlling feiefs

So im planning out my campaign and want to create my first kingdom. ive watched a couple of guides etc but a question im having is why dont i just own fiefs myself as king? I get loyalty might be an issue but as long as you have companions who can remedy that it should be fine right? think i saw a video where theres this "bug" or whatever where lords betray your kingdom to join an enemy faction even if you are winning
