How do you defend holdings?

Whenever I eventually become a noble I make it my mission to get my first castle. The problem is that as soon as it’s captured I don’t have enough time to fortify it before it gets taken back. For example, I always end up getting Garontor castle and I try to go to towns to get more troops for the garrison, but by the time I get back it’s being sieged again. What can I do to ensure I actually hold onto them and grow my holdings?
