The Sarranids are actually Mamlukes, not the local Aserai. In Warband, native Aserai are nearly extinct, since Mamlukes have become increasingly predominant throughout time.
In Bannerlord, the Aserai have two troop trees: the native Aserai, which starts with Tribesmen; and the Mamlukes, which starts with Mamluke Soldiers. For those who do not know, Mamlukes are actually slave soldiers of other ethnicities, meaning they are not Aserais. Based on the real-life Mamluke Sultanate, Mamluke troops of the Ayyubid ruler as-Salih Ayyub succeeded to usup power. The Mamluke Sultanate was then formed, ruled by the mamluke military caste, with the sultan and the emirs at the helm. Similiarly, the Sarranid Sultanate's ruler is a Sultan, the lords are called Emirs, and the top tier troop of the faction are called Mamlukes.
My theory is that Aserai mamluke regiments (perhaps primarily from the Banu Sarran clan) overthrew the Aserai and established the Sarranid Sultanate, similar to the Mamluke Sultanate.
The faces of the troops of the Sarranid Sultanate are more "Western" (for a lack of a better word), than "native." Of course, this might possibly be due to game engine restrictions or a lack of insight from the developers. I find that highly unlikely, however. The many factions in Warband have their own unique face codes, and there also more "native" faces that would have fit the Sarranid Sultanate theme more. I believe the Sarranid faces are deliberate.
