What's the best/ most polished total conversion mod out right now?

I've been meaning to get into Bannerlord again after a year of not touching it and want to know what's the state of the full conversion mods as I find the vanilla game uninteresting. Last year I did a EoE 1100 save and really enjoyed it but now I wanted to try something different and ideally that would take advantage of the latest updates and War Sails DLC (which I haven't bought but I'm open to), so being recently updated is a plus .

From what I gathered my best options are:
-Realm of Thrones;

-Eagle Rising;

-EoE 1100;

-EoE 1700;

-Shokuho;

-Anno Domini 1259 (continued).

From what I understand, out of these the only one that incorporates War Sails is Eagle Rising, but at the expense of messing up other good parts of the mod, like the europa map. So is Eagle Rising what I'm looking for or are there better options, how does it play without the europa map? And what's the general state of the total conversion mod scene?
